Beef Tongue and Guanciale Take a Bath

The kitchen's new immersion circulator works its low and slow magic on Deep Creek Ranch beef tongues. Beef tongue also recently made an appearance on the menu braised, with fingerling potato hash and local radish salad.

The guanciale in this panini with mustard sauce also got cryo'ed and took a dip in a 69 degrees Celcius water bath for several hours. Guanciale is unsmoked, cured pork cheek.

Today the James Beard Foundation announced its 2010 award nominees… Miami Herald restaurant critic Victoria Pesce Elliott has a great recap of how South Florida culinary talent fared on her Facebook.  Michael has been nominated for a Best Chef South award, and Hedy for Outstanding Pastry Chef.  Chef and Pastry Chef…  It’s a good day!  Congrats to all the nominees!

Hello My Name Is… Daphne Robboy, Intern

She’s only been with us for a month, but Daphne Robboy is doing a bang up job as the first MGFD intern!  A Miami native, Daphne is currently finishing up her Masters in Hospitality Management from Florida International University.  She’s helping us with everything from getting the vendor cart off the ground to making sure we stay on top of the latest buzz in the food industry; and of course, the occasional photocopy or two. We haven’t sent her on any coffee runs yet, but there’s a first time for everything, right Daphne?  Just kidding!  Welcome to the team!

Childhood ambition:  It was to become a Ballet Dancer for a company in NY.

Favorite dish at MGFD: Thick Cut Potato Chips with pan-fried onion dip (just tried them, delish!)

Most popular food prepared in your home: Any thing with cheese.

Wildest food ever eaten: Flash Fried Scorpion from a street vendor in Shanghai.

Favorite beverage at MGFD: Haven’t tried any yet.

Proudest moment: Many, but most recently Graduation.

Biggest challenge: Moving away from Miami.

Perfect day: Sunny day on the lounging on the beach.

First job: Nordstrom, as a sales associate on the floor.

Ideal spot for your vacation home: Harbor Island, Bahamas.
