Joining Chef Thomas Tennant as of this week in Grand Cayman are Manager Leilani de Leon, Bar Manager Ryan Goodspeed, Sommelier Eric Larkee, Pastry Chef Thais Rodriguez, and General Manager Charles Bell. Charles and Leilani will be island-based for at least three months, while the beverage team will just stay through the opening, returning in late June. Thais, like Thomas, is a permanent transfer!
Ryan, Eric, and I arrived safely and with Caribbean music playing as we walked off the plane. It’s beautiful over here, and the restaurant is coming along beautifully!
