Hello My Name Is… Albert Morgan, Sous Chef

Albert Morgan remembers the exact date he began working as a line cook at Michael’s Genuine.  It was August 18, 2007.  By now, Albert is a long-time fixture in our Miami kitchen.  He was one of the chefs cooking up Michael’s award-winning Genuine Bacon Cheeseburger at the 2010 Burger Bash and recently wowed Jefe himself with his version of the housemade ricotta. Take a look at the snack section of the menu, and you’ll know what I’m talking about.  Get to know our newly-minted resident fresh cheesemaker a little better, below.

Name: Albert A Morgan.

Childhood ambition:  I had a lot of ambitions.  A cop, firefighter, baseball player, football player, you name it.  I even played basketball as a kid, too.

Favorite dish at MGFD:  The ricotta cheese, of course.

Most popular food prepared in your home: Carne asada with beans and rice. I’m Nicaraguan, so…  Mom mom usually makes it, but I make it at home sometimes too.  It’s like the main dish every Nicaraguan restaurant should have.

Wildest food ever eaten:  Iguana. When I was living in Nicaragua growing up my mom used to give us iguana from time to time.

Favorite beverage at MGFD:  You know what it is… The Tucher beer.

Proudest moment:  Graduating from culinary school. And my kids when they were born.

Biggest challenge: Not being able to live with my kids and only getting to see them every other weekend.

Perfect day: It’s never a perfect day.  It’s always a challenge.

First job: Working at Wendy’s. I did everything there.  Did every station basically.

Ideal spot for your vacation home: Costa Rica. Half my family lives there. After they moved in the late ’80s due to the war, they ended up living there.  It’s a beautiful place.  I love fishing, and it’s a great place to fish.

Indulgence:  Nice watches.

Inspirations:  I was inspired by Michael to make the homemade ricotta. He showed me how to do it once, and I ended up changing it, and it came out better than his.

My life:  I was in high school and didn’t know what I wanted to do with my life.  I did not have any ambition to go to collage and doing something.  My life was going down south, not going up.  So then I met my girlfriend seven years ago. and I knew the only way that her parents would allow me to be with her was if I was somebody.  You know, had a career. And that’s how I ended up picking this career for that reason.  I was also inspired by Emeril when he started popping.  It inspired me more to do cooking.  I watched all his shows and said, you know what, I want to that.  And so, bam..

  1. I hope we’ll have the pleasure of experiencing fresh ricotta here at the Cayman Michael’s. I once made my own fresh cottage cheese and it was fabulous — so beyond what comes from the supermarket and well worth the effort! Congratulations to Albert for finding the right path.
