Dear Chef: Minding Your Q’s on The Genuine Kitchen

Dear Chef is something we’ve been wanting to try out on the blog for a while now, where we offer up the cooking advice of our restaurant chefs to you, dear reader.

We were reminded to get it going by the New York Times Diner’s Journal blog, which, if you’ve been following lately, is also asking readers to submit their questions to [insert token food expert.]

Simply email questions to, and we’ll pick some to answer every week. Ingredients, tools, techniques, and troubleshooting…  Shocking, fun, enlightening, and appalling — We’ve seen it all.   If you’re baffled or curious, one of us in the back of the house will try to help.  We’ll tweet when questions are chosen and when answers are posted.
