Yellow Jack, Now in the Walk-in

Casablanca just dropped off today’s local fish of the day: Yellow Jack. It’s a sustainable choice for us during the summer and has a mild taste and firm texture that fires off nicely in the wood burning oven, and makes a great ceviche, too.  Today as a lunch entree, the Jack is wood-roasted and served with sauteed escarole, grilled lemon, and provencal vinaigrette.

  1. Spearfishing is the ultimate in efficient and eco-friendly ocean hunting. Scout your prey and lock in. It fascinates us because we are in their environment.
