Traymore by Michael Schwartz Unveils Sling Bar, a Night Market Cocktail Bar at COMO Metropolitan Miami Beach

Ocean Drive’s The List Party presided for official opening festivities last night.

Miami Beach has a new hideaway for a fresh taste of the exotic. Sling Bar, a night market cocktail bar opens tonight at Traymore by Michael Schwartz in the COMO Metropolitan Miami Beach.  Cocktails and bar snacks are inspired by the many flavors of Singapore, highlighting the bold and diverse food cultures of Southeast Asia that converge in the global city’s many festive night markets.  Set within the restaurant’s lush and tropical environment, Sling Bar’s energy is immersive, from its “hot coral” orange neon SLING sign, to an evocative video installation portraying circadian rhythms and the juxtaposition of their experience in nature and urban environments.

“Sling Bar is a great addition to the Traymore by Michael Schwartz experience,” says Schwartz. “Singapore is such a vibrant intersection of food cultures — I was able to experience its energy on a recent trip and was inspired by drinks, dishes and even new ingredients that have influenced the menu and cocktail recipes. We are excited to give guests an opportunity to taste something different on a visit to the property, whether joining us for a quick bite and drink at happy hour or making a night of it to dine at the bar.”

From light and refreshing to spirit forward and festive, Sling Bar’s cocktail program is inspired by night market flavors and highlights classic Asian cocktails with a Miami Beach inspired twist. Described as “culinary cocktails” Sling Bar’s libations are designed to be uncomplicated and perfectly paired with bar bites. In the ultimate homage to its name, the ‘SB Sling’ is Sling Bar’s preeminent cocktail and features Bombay East Gin, Benedictine PF Orange Curaçao, pineapple, lime and cherry cordial. Other cocktail menu highlights include the ‘Curry Colada’ with Havana Club Rum, Velvet Falernum, curry syrup, coconut creme, lime, passion fruit and the ‘Banana Daiquiri’ featuring Havana Club Rum, Craigellachie 13 Scotch, banana, lime and coconut.

Executive Chef Jorge Negron was inspired by traditional Singaporean street food flavors and culture when developing new menu items for the bar, incorporating craveable snacks and plates that speak to the diversity of cuisines from Malaysia and India to China and Indonesia inhabiting its neighborhoods. Presentation is simple and convivial, perfect for sharing and pairing with the cocktail list. Menu highlights include the Chicken Satay with peanut sauce, Steamed Snapper Dumplings with garlic oil, coconut sauce, the Young Coconut Salad – curry chicken, rice crisps and the Singaporean Style Stone Crabs seasoned with parsley green onions.

Sling Bar’s food complements Michael Schwartz’s menu at Traymore and celebrates in-season, local ingredients, in line with COMO’s award-winning restaurants worldwide which embrace sustainable sources and pay homage to the flavors of their different locations.

Traymore by Michael Schwartz Opens in March, a Miami Beach Hideaway for a Fresh Taste of the Exotic

Cocktail testing

We are excited to announce that Traymore by Michael Schwartz will open in March with our partners at COMO Metropolitan Miami Beach.  Exploring the lighter, brighter side of South East Asia and the Pacific tropics, Chef’s new menu finds vibrant flavor and energy at the intersection of bold umami and delicate, natural freshness. Guests will experience a redesign of the main dining room, terrace and inner beach path-fronted garden, with lunch, dinner and a new bar program to start.

“I have always been drawn to the bold, bright flavors and ingredients of this part of the world and am inspired by the sense of harmony core to what the COMO brand of hospitality and healthy, delicious food is all about,” Michael says.  “For me, a restaurant is always about the entire experience not just the food and that was really important as we thought about what we wanted this place to become. The bar program channels this balance and brings it all together.”

Raw Bar items like Royal Red Shrimp coconut milk, lime, Thai basil, crispy rice; shareable, vegetable-driven small plates under ‘Market Table’ such as Scarlet Turnips with bottarga, white miso; Appetizers like Beef Carpaccio with heart of palm, kohlrabi, peanuts, burnt lime vinaigrette. Entrees include Wok Charred Wild Salmon four sprout salad, toasted pumpkin seeds, soy lime vinaigrette and sides like Stir Fried Thai Eggplant Curry. Finally, indulgent flavor-packed desserts including Black Sesame Pound Cake with coconut cream, marinated papaya, toasted sesame seed.

Schwartz has collaborated with longtime partners at award-winning design firm Meyer Davis Studio – designers of Amara at Paraiso and the forthcoming restaurant at Park Grove – to refresh the space, celebrating its art deco past and the integrity of existing design elements.  The Genuine Hospitality Group will oversee food and beverage throughout the property including in-room dining service and the pool area.  Brunch will shortly follow.

“Miami Beach will always be about the scene, but in this particular location on Mid-Beach we wanted to work with this idea of how losing yourself in good energy can be just as invigorating,” Michael continues. “It’s still a largely unexplored stretch, which is definitely part of the draw.  Tapping into the beach as the original getaway destination it will always be and making that more accessible to locals. It can be that for them, too. Especially!”

COMO Metropolitan Miami Beach is located at 2445 Collins Ave, Miami Beach, 33140. For more information visit traymoremiamibeach.com and follow the new restaurant and bar for updates on opening including events and menu, on Instagram @traymoremiamibeach.

Schwartz Readies His Beachside Manor Announcing New Restaurant at COMO Metropolitan Miami Beach

COMO, estás. Today Michael is excited to announce a partnership with COMO Hotels and Resorts to open a new restaurant at COMO Metropolitan Miami Beach later this year in the Traymore Restaurant and Gin Bar space at 2445 Collins Ave. In addition to rolling out new breakfast, lunch, dinner and brunch menus, The Genuine Hospitality Group will oversee food and beverage throughout the property including in-room dining service. We have already begun to immerse ourselves in this beautiful new environment and are inspired to be back on Miami Beach where the spirit and soul is layered and strong. Opening is planned in time for the 2018-19 season.

“For us, it’s always about more than the food. But the food is really important!” Michael explains.  “We feel a kinship with what the COMO brand represents.  There is a commitment to both personalized service and reflecting the location of the property and its history in the space.  It’s about a holistic approach to creating a thoughtful experience for guests.”

As restaurant people, we are driven by the opportunity to create and feed off this energy, whether it’s an experience inside one of our existing spaces or developing a new one.  Despite the many projects that come across our desks, there are few that make sense to pursue — the right mix of timing, inspiration and resources, and of course how it impacts our people and the growth of the business at large.

Name and concept will be announced soon, with an approach grounded in food you can feel good about eating, natural and balanced with global influences. Michael will collaborate with longtime partners at award-winning design firm Meyer Davis Studio – designers of Amara at Paraiso and the forthcoming restaurant at Park Grove – to refresh the space, celebrating its art deco past and the integrity of existing design elements.

COMO Metropolitan Miami Beach is a 74-room hotel occupying an original 1930s building located in the heart of the city’s famous art deco district. The hotel has direct access to the beach and a private swimming pool, two restaurants, and a COMO Shambhala Urban Escape spa. Located on Collins Avenue and 24th Street, the views stretch across the Atlantic to the east or the Intracoastal Waterway to the west, flooding rooms with Miami Beach sunshine. Interiors are by the Italian designer Paola Navone, who preserved the hotel’s art deco heritage and contrasted it with an urbane, contemporary spirit in shades of peppermint green and dusky grey with surfaces of cool white marble and shining chrome. Traymore, the hotel’s headline restaurant, offers fine Floridian seafood and the signature Traymore Bar showcases over 30 artisanal gins. The COMO Shambhala Urban Escape spa features four treatment rooms and a rooftop hydrotherapy pool.
